Saturday night we had some friends over for some testosterone-filled, meat-consuming UFC 104 action.  My cousin’s son (does that make him my second cousin?), Ryan Bader fought in UFC 104, but he was one of the earlier fights that showed up on Spike rather than the paid UFC fight.  Turns out that it is mighty stressful watching someone you know in the Octagon.  The fights can be quite brutal, but when you don’t know the people, you can just dismiss it.  When you know the guy getting his temple elbowed repeatedly, yikes, it stresses you out.  All of us in our basement theater were gasping and cheering and attempting to use our emotional push to will Ryan to win his fight.  He did, but it was by decision after three LONG rounds.  Phew!

For some balance, Sunday was a day of rest and VEGETABLES!  This was not planned, but as I look back on it, Sunday was very vegetarian focused.  The day started with Belén trying something new, avocados!  She likes them until she gets tired of eating them.

It was also our first attempt at using the BabyCook from Williams & Sonoma.  It totally rocks!

Next, Andy and I had breakfast at our favorite Sunday morning eatery, the 36th Street Bistro.  Here is a picture of Belén enjoying the atmosphere.

After breakfast, Andy worked on a Python script to pull out the content from all of our old blog entires from web.me.com/hoobing and so it would be easier for me to copy them to this wordpress blog.  As a sidenote, over the next week or two, I will be adding in all of our old blog entries and photos from the past to this blog, so if you are ever inclined to read about our time in Mexico, China or an array of other places and phases, you will be able to do that from this blog soon!  It is a lot of work to transfer this stuff over, so hopefully wordpress is able to meet our needs long term because I do NOT want to be doing this again soon.

Anyway, Belén and I took on the project of turning the massive banana squash from my dad’s garden into baby food.  Belén helped by playing in her ExerSaucer while I tried my darndest to cut that sucker up, then bake most of it in the oven, while a small part of it baked in the BabyCook.  I only have two food/ice cube trays for freezing the food so I think it will be days until I get all of it frozen for future use.  Needless to say, we had squash EVERYWHERE by the end of that project.  It also took a lot longer than I was anticipating so Andy had to commandeer the kitchen to make dinner for our friends who were coming over.

Our friends Nataraj and Sangeeta are expecting their first child in six months so we were really excited to have them over to introduce them to Belén and talk pregnancy and babies.  They were eager to learn all that we would share and it was so fun to revel in their excitement for their coming baby.  Since both Nataraj and Sangeeta are vegetarians, Andy had to switch his focus from our Argentine grill and beef to what the heck do I make that is vegetarian?

Perhaps it is amateur of us, but we both immediately thought portabella mushrooms.  Andy found a recipe for crab stuffed portabella mushrooms and then substituded the crab for a bunch of different vegetables, namely onions and bell peppers.  Meanwhile, I made some chocolate chip cookies.  Goodness, weren’t we the domestic pair?  You might wonder if we were abducted and replaced (especially me)?

Anyway, the stuffed portabella mushrooms turned out good and were tasty.  Sangeeta brought a divine soup that was a mixture of hot and sour soup and Indian spices.  It turned out to be a great meal if we do say so ourselves, but then again we don’t eat vegetarian very often so we should ask Nataraj and Sangeeta what they thought.  Of course they said it was good as they are very polite and the nicest of people.
