This past weekend, I made two delicious desserts. The first was for a dinner with some friends at our house. I made this French Silk Pie recipe at the recommendation of my sister.

The prep was not bad and mostly consisted of waiting for my KitchenAid to do its magic. The recipe makes enough filling for two pies really. I made one in a ready made Oreo crust and the other in a “normal” pie crust requiring baking (shown above.) I think the Oreo crust was more tasty and yes of course I had to sample both in order to give a proper recommendation. Also, I recommend using baker’s sugar instead of normal sugar AND putting freshly made whipped cream on top with chocolate chips sprinkled in the whipped cream. Um, yum!

One of the guy’s on my team at work had a birthday on Monday so I made this carrot cake which has over 2000 positive reviews on allrecipes.com.

Ingredients
Before making this I actually thought carrot cake might be a little bit more healthy than other cakes, you know, carrots, cream cheese in the frosting…healthy stuff, right? I cannot recall obtaining a quicker sugar high than after licking the beaters used to make the icing which contains four cups confectioners’ sugar!!

The only modification I would make to this one is fewer nuts. I would use half the number of nuts in the frosting.
Ha, I almost sound like one of the bakers/cooks who know what they are doing and modify recipes and stuff…do I ever have you fooled.
Both of these recipes turned out scrumpdillicious and I highly recommend them.
So if this blog was not diverse enough before, now you can add baking to the list. This is why I can never pin myself into a category (mommy blog, baking blog, cooking blog, exercise blog, etc.) You just never know what you are going to get.
